AZUR Restaurant & Patio executive chef and co-owner Jeremy Ashby will be hosting the first installment of Food Chain Chef Series later this month. The chef series will explore sustainable food practices in depth with dinners that progress course-by-course through the natural food chain of a species.
The Food Chain Chef Series will begin with "Ocean," showcasing sustainable seafood. The seven-course tasting menu will feature the indigenous predator of the preceding course accented with ingredients that highlight the inherent essence of each fish.
Beginning with konbu seaweed, the dinner then features shrimp and lobster, mullet, golden tilefish, snapper, and finishes with amberjack. (There's also a caramel flan dessert.)
