Lexington, KY – Nestled just off Newtown Pike along a rehabbed industrial corridor on Third Street, the five owners of Blue Stallion Brewing Company are expecting a crowd.
The crowd for Wednesday’s grand opening celebration will be a welcome sight to Nico Schulz, Jim Clemons and brothers Kore, Zac and Xavier Donnelly, all owners of the 7,000-square-foot brewhouse and bar. The group began the build out of the facility near the end of 2012 and did much of the work – spare some drywall hanging – themselves. They even went to pick up the copper-sided brewing equipment themselves, carrying it out of its previous owner’s facility while customers dined, according to Clemons.
Starting at 6:30 p.m. on Wednesday, the doors of 610 West Third will open to a craft brewery concept that is different from what Lexington has seen in the last 18 months, since the opening of West Sixth and Country Boy breweries. Pool tables, dart boards and multiple rooms of varying sizes give more of a bar or even sports bar feel to the new facility. Customers can enjoy a clear view of the rows of brewing equipment through a nearby open garage door, with two chain-linked barriers separating the employees-only brewing operation from the public side of the business.
Kore Donnelly said there will be at least five beers on tap for the opening (German Pilsner, Munich Dunkel, Smoked Lager, Scottish 70 Schilling and Hefeweizen) and more to come in the next week. The beers at Blue Stallion will take on more of a German and British flare while steering away from the hoppy nature of IPAs, which have become a staple for craft beers nationally.
