Lexington, KY – Newk’s Eatery, a fast-casual chain that offers California-style gourmet pizzas, fresh tossed salads and toasted specialty sandwiches will have a groundbreaking for its first Lexington location today.
The location will be on an out lot in front of the Richmond Road campus of Southland Christian Church near Applebee’s and a new McDonald’s location that is currently under construction.
“Newk’s offers a more upscale, family friendly experience than other fast casual brands, with higher quality food and a more modest cost,” said franchise owner/operator Jay Minner.
Newk’s began as a small, sandwich shop in the college town of Oxford, Miss. a decade ago. Newk’s Eatery has grown into one of the nations fastest growing restaurants, with 68 locations across 13 states,” according to a release from the franchisees. “Many in Lexington are already familiar with Newk’s through its incredibly popular locations in Nashville, Austin or Atlanta,” owner Matt Minner said. “Newk’s has become a staple in most of the Southeastern Conference cities and it’s long awaited arrival in Lexington is almost here.”
Newk’s was founded by a family with the last name of Newcomb before it began to spread around the southeast.
Newk’s Eatery plans to have a strong presence in Kentucky led by two locations in Lexington opening by the end of the year. Newk’s. In addition to the 4,500 square foot Richmond Road store that is scheduled to open in November, the Minners plan a a second location at Fayette Mall. Newk’s will bring over 100 new jobs to the area. There are plans for more restaurants in the near future as Newk’s Eatery continues to expand, the release states.
