Recipe by Latrice Webster, a Waffle House cook who recently debuted her catering company Wilson's Family Catering at Crave Lexington. She and her partner Garren Capers, were featured in our feature "A Family Affair," which takes a look inside the home family kitchen of several professional chefs.
(Yields 5 tacos)
Taco Ingredients:
2 breasts boneless chicken breast
Cabbage, cut or shredded really fine (about two cups)
One potato (cut shredded)
Two cups of kernel corn of your choice (Note: you'll want to keep the juice that you boil your corn in. Set it aside.)
A pack of small tortillas of choice
2 tablespoons of seasoning salt
2 tablespoons of pepper
Directions:
Broil your chicken breast and shred it until it is very fine.
Coat a nonstick skillet with a little corn oil. Drain excess oil from pan.
Place your chicken, cabbage, potatoes and corn in pan; add your salt and pepper. Let it cook until cabbage and potatoes are soft.
Now make Wilson’s Sweet Sauce
Take your juice from the corn and cook it on high heat until it starts to boil. Add in 1/3 cup of sugar, 1/3 cup flour and 4 tablespoons butter. Let it simmer until it starts to thicken (you 'll want the flour to leave small lumps in sauce). Remove it from heat.
Place about 2 tablespoons of chicken mixture inside each tortilla; roll it up, making sure all corners are tucked.
Spray the bottom of a medium size pan with non stick cooking spray and place your tortillas inside. Cook for about 30 sec on each side on medium heat until golden brown, then remove them.
Take your Wilson sauce and spread over the tortillas and top with your remaining chicken mixture.
This recipe takes a total of 30 minutes max to make. Also try adding in different peppers and onion in your chicken mix. It’s great! Hope you enjoy this quick recipe by Chef Latrice Webster!
