Ham Salad 1

Lockbox at 21c chef Jonathan Searle brings back a classic Southern dish and Kentucky entertaining standard with this Country Ham Salad. Dressed with housemade pickles, crackers and mustard, this dish is perfect for a Keeneland tailgate or cocktail party.
Ingredients:
• 2 pounds Broadbent Country Ham
• 2 cups mayonnaise
• 1 cup small fresno chile, diced
• 1 cup small shallot, diced
• 1 cup flat leaf parsley, chopped
• 1 cup sherry vinegar
• Salt, pepper & lemon juice to taste
Method:
Dice shallots and chiles and place them in the sherry vinegar. Cut country ham into medium-sized cubes. Using a food processor, pulse the country ham until it is well shredded and flaky (do not overwork it into a paste). Place flaked country ham in a bowl with all remaining ingredients, and mix until all ingredients are well incorporated. Adjust seasoning to personal taste. Serves six to eight. Enjoy! cc
