Bear and the Butcher
This “meat-centered” restaurant is being developed by Tom Behr and his sons, owners of the Village Idiot, Pazzo’s and more. Located at 815 Euclid Ave. (next door to the also Behr-owned The Beer Trappe), Bear and the Butcher will focus on primal cuts and whole animals; its kitchen also will supply sausage and burgers for the Behrs’ other spots. Mirror Twin Brewing Co. and Rolling Oven
Mirror Twin is set to become Lexington’s newest craft beer destination when its brewpub opens later this summer along National Avenue in the Warehouse Block neighborhood on Lexington’s near east side. Patrons will be able enjoy a local slice with their hometown brews: Mirror Twin is partnering with popular food truck Rolling Oven, which will have a permanent brick-and-mortar presence inside the brewpub.
Carson’s Food & Drink
Expect chef-driven American cuisine when this new restaurant opens in 5,000 square feet of space at 360–362 E. Main St. Developer Mark Fichtner is promising Ralph Lauren-inspired “rustic elegance,” including a double-sided fireplace, 170-plus seats, 20-seat bar and patio. The menu will include truffle fries with béarnaise sauce and lump crab meat, a curried coconut mussel dish and Hawaiian marinated ribeye, to name a few items. The grand opening is slated for the end of September or the first week of October.
