Representing the United States Pizza Team in Salsomaggiore, Italy, Lexington’s Greg Spaulding took home the Best in the U.S. Award in the Classic Pizza category last month at the 2012 World Championship of Pizza.
Spaulding, who manages three local Puccini’s Smiling Teeth locations, made the Campfire pizza, a popular Puccini’s pie that features sausage, sweet onion marmalade and rosemary, with the recipe slightly amended due to the local ingredients that were available in Italy.
The U.S. Pizza Team was organized by PMQ Pizza Magazine, the most widely circulated pizza industry publication in the United States. The competition also featured a Pan Pizza category, a Gluten-Free category, and competitions in Freestyle Acrobatics and Dough-Stretching.
