Quick on the heels of the announcement that a craft beer bar is setting up shop at The Square in downtown Lexington comes news of another tenant moving in.
Vinaigrette Salad Kitchen, which bills itself as a “fast casual” salad shop, will open its doors Tuesday, March 31. In addition to made-to-order gourmet salads, Vinaigrette also offers soups and specialty drinks.
“The Vinaigrette team is really excited to open in The Square and bring a new fast casual dining option to downtown,” co-owner Bryce Anderson said in a statement.
The news follows the announcement that craft beer bar HopCat plans to open a two-story, $3 million location at 410 W. Short Street in August.
