Owners Ralph and Donna Quillin opened the microbrewery and taproom Rooster Brewing in downtown Paris, Kentucky before looking for a Lexington spot with food partners Andrew Suthers and Kyle Klatka from Gastro Gnomes. Customers can order food from the bar, grab a beer (or cocktail) and a table, and then watch what’s going on in the open show kitchen, with food delivered to the table in about eight minutes.
Hours: Tues.-Sat.: 11 a.m.-11 p.m.; Sun.: 11 a.m.-8 p.m.
