Mamadou “Sav” Savané was raised in Guinea, West Africa, and learned how to cook from his family. His restaurant continues the tradition of these recipes and gives us a flavor we have never seen in Lexington. The Leaf & Beef is a peanut-based stew that melds beef, spinach, onion, palm oil and African seasonings. You can get it served over white or organic brown rice, but I always get the fufu. Fufu (in addition to being fun to say) is a plantain dumpling and, to me, tastes like a mix between mashed potatoes and a Southern dumpling. I highly recommend it. Sav’s is very vegetarian/vegan friendly, and a vegan option for this dish is also available.
