Noodles and Company opened its second Lexington location on Tuesday, at the corner of Limestone and Euclid Avenue, near the University of Kentucky campus.
The Colorado-based fast-casual restaurant, which specializes in globally inspired pasta dishes, was launched in the Denver area in 1995. It first arrived in Lexington in 2013, when local franchisee Chad Colony opened his first Noodles and Company in a former Long John Silver’s location on Nicholasville Road.
“I am so excited to be opening our second Noodles and Company location in Lexington,” Colony said in a release on the restaurant opening. “The South Limestone location will use bike delivery in order to best service the UK campus as well as downtown Lexington and surrounding areas. In addition, we will be launching the first ever late-night menu in order to best meet the needs and tastes of the surrounding neighborhoods. This will be the only Noodles & Company in the country to currently offer these combined features.”
The new location will offer bike delivery to businesses and residences within a radius of 1.5 miles, according to Colony. That will include the campuses of the University of Kentucky and Transylvania University, as well as downtown Lexington, St. Joseph’s Hospital, Central Baptist Hospital and part of the Chevy Chase neighborhood.
Noodles and Company currently has 345 locations across 26 states and the District of Columbia. Colony said he plans to eventually grow his chain to include five Noodles and Company locations in Lexington and the surrounding counties, with up to 200 employees. Colony’s franchise market area includes much of central Kentucky, from Frankfort to Georgetown and down to Richmond and Nicholasville.
