2 pounds sweet potatoes
¼ cup olive oil
1 teaspoon kosher salt
½ teaspoon ground cumin
½ teaspoon garlic powder
⅛ teaspoon cayenne powder
Preheat the oven to 425 degrees F. Wash and scrub the potatoes and dry them
thoroughly. Trim off the ends and cut into ½ inch wide X 3 inch long strips. Place in a
large bowl. Toss with the oil, salt, cumin, garlic powder, and cayenne powder. Spread
on a rimmed baking sheet. Bake for 30 minutes, until browned and tender.
